Producer notes
The Cà de Noci winery was set up in 1993 by two brothers on their family’s estate near Reggio Emilia. The winery was named after the walnut forest growing on the estate and grows local traditional grape varieties, that are at risk of disappearing, using organic methods.
The vines are planted in rocky limestone soil along the Crostolo river. The dryness and poor soil help give the grapes intense flavour and minerality. All the vines were planted in the 1990s and are therefore fairly young.

Production method | The grapes are hand-harvested and pressed on a manual press. The grapes are macerated for 10 days on their skins. The wine is aged without filtration and is subject to a natural refermentation in bottle to produce a dry, sparkling wine. |
